Young entrepreneur Michael Watson has taken on his first bricks and mortar venue - Watson's. If you have visited the Entertainment Quarter at Moore Park for a sporting match, concert or festival – it’s more than likely you’ve had a pre or post drink at the corner pub. Previously PJ O’Gallagher’s and before that The Fox and Lion, the old haunt was in need of some young blood. The sparkling new venue Watson’s is ready to roll when lockdown restrictions lift – the EQ has been waiting on a winner and Watson’s has arrived.

The Journey from Entrepreneurship to Pub Ownership

Michael Watson, a young entrepreneur, ventured into the hospitality industry after studying Sports Business. He founded Wats On Tap, a mobile bar hire company that evolved into a successful beverage catering service for large events, festivals, and pop-ups. In 2015, the business rebranded as Wats On Events, with Watson harboring aspirations to one day own a pub.

A Serendipitous Opportunity

While working on a contract for Magic Mike Live, Watson noticed the vacant site of the former PJ Gallagher's pub at The Entertainment Quarter (EQ). He seized the opportunity to transform it into his own venue and soon turned his dream into a reality, establishing Watson's pub. The dark and dilapidated Irish pub underwent extensive renovations, with the entire space refurbished to create a modern and welcoming environment.

A Versatile Venue for the Community

Watson's is designed to cater to a diverse range of occasions, from local gatherings to key calendar events like Melbourne Cup and Mardi Gras. With the anticipated reopening of the Sydney Football Stadium, the venue is poised to benefit from increased foot traffic from sports and music events at The Horden Pavilion.

Emphasizing Quality Food and Beverage

Watson's offers modern Australian pub food and classics made from seasonal and local produce. Their in-house kitchen produces items like pickles, preserves, and sauces. Head chef Uriel Kilala crafted a menu that caters to a diverse crowd, featuring pub classics, snacks, and small plates for sharing. The grill menu includes a 1kg Ranger's Valley Black Onyx Rib Eye and a braised Moroccan-spiced lamb shoulder.

An Extensive Beverage Selection

The beverage offerings at Watson's feature a wide range of mainly Australian wines, craft, international, and Australian beers, and classic cocktails, including spritz options perfect for courtyard lounging.

Opening a new pub in the midst of a pandemic brought its fair share of challenges, with construction delays and changing restrictions. Watson emphasizes the importance of adaptability, patience, and building a strong team to navigate the uncertainty.
