‘Autumn Lamb’ chef-editor Dave Verheul (Embla) discovers the unique characteristics of ‘haired’ sheep

In this video, Graham Gilmore, Co-Principal of Tattykeel, discusses the journey of a family-owned farm and their efforts to improve meat quality in the livestock industry.

Tattykeel is a family-operated farm that began with the original property Teleco in Northern Ireland. Over time, the family acquired several smaller farms to create a larger, more sustainable farm.

The farm expanded its operations into South America, with a particular focus on producing high-quality meat. This expansion led to the development of a unique breed of sheep called the Australian white.

Tattykeel believes that eating quality will be a critical factor in the future of the global protein market. They prioritize producing meat with exceptional taste and texture.

Head sheep are introduced as a cost-effective and sustainable alternative to traditional livestock. They offer benefits such as reduced chemical costs and natural meat production.

The specific traits Tattykeel aims to breed for in their sheep, including dark pigment for reduced skin cancer risk, strong feet for wet conditions, and hollow hair for insulation in hot climates.
